Quentin and I recently had to go for some blood tests for insurance, and his results came back this week, indicating that he may have very high cholesterol. Obviously, we will get our doctor to check out the results when mine come through, but I realised that, for some time now, we haven’t been eating all that healthily – sure, we’ve cut out meat, but we’ve still had a lot of take-aways and junk food recently. So, from today, we are going to pay a bit closer attention to what we eat. I have decided that I will work out our menus for the week on a Sunday, buy the ingredients for the week’s meal fresh on a Sunday and then post the recipes here once made.
This week’s menu as follows:
Sunday | Lentil Bobotie with yellow rice |
Monday | Mushroom Bolognese |
Tuesday | Tofu stir-fry with noodles |
Wednesday | FFA* |
Thursday | Vegetable Korma |
Friday | Lentil burgers |
For today’s Bobotie, I used this recipe. I just added red onions fried in coconut oil, as well as some cumin, and replaced the sugar with honey.
Yellow rice: Bring 1 cup of rice to the boil with 3 cups of water and a pinch of salt. Once the water starts boiling away, add 1t Tumeric, raisins and honey to taste. Reduce heat and simmer until the rice is fluffy and light. I also add cinnamon and cloves.
